
Saying I was excited to make these pancakes would be an understatement. I was very, VERY impatient to make these pancakes.
The recipe is pretty straightforward but as luck would have it I didn’t have 2 ingredients, brown sugar and nutmeg. I knew about the nutmeg (not a huge fan and just added a dash more clove and cinnamon to make up for it) but the brown sugar was a surprise. I substituted honey which did the trick!
The batter is rather thick because of the apple so if you are looking for a recipe that will make perfectly round pancakes, I’d steer clear of this one. Also, because of the thick batter I found turning up the heat (compared to the Diner Pancakes) really helped cook them better.
I followed the suggestion of the poster and didn’t peel the apple which was quite nice, it added a little unexpected texture like you’d get in a real apple pie. I used a granny smith apple this morning and I think the tartness helped to balance the sweetness of the other ingredients. I also skipped the vanilla syrup and just opted for regular syrup.
